The process itself is certified by the Det Norske Veritas. Once the caffeine has been removed, illy repeatedly tests the final product, ensuring extremely low levels of both dichloromethanol and caffeine – as well as ensuring a cup of coffee that even an expert couldn't tell was decaffeinated.
